“Slow Carb” Recipes


I call this BEATS – Bacon, Eggs, Avocado, Tomato and Spinach


The usual breakfast:


1 whole egg, 3 egg whites

1 cup sauteed spinach

1 cup mushrooms

Egg Salad Lettuce Wraps


I wouldn’t say this is much of a recipe- just an easy meal that is slow carb friendly.  You can all all kinds of other ingredients- bacon bits, red chili pepper, and my fave, avocado. It’s simple, courtesy of Trader Joe’s:

All you need is:

2 Romaine hearts

1 container Egg Salad (its only 120 calories!)

1 Roma tomato

*Mustard, kosher salt (any garnishment of your choice)
